Stills from D300s, best settings?

->> I am toying with the video on this D300s. Maybe I just don't understand it. What are the best settings to increase the chances of snaring a usable still for editing. This may not even be possible, but I am hoping someone has had some success. If it isn't, well, then it isn't. Just thought it would be interesting to try at 24fps.

The first test I did for a horse race, I set it to manual at 400ISO, F5.6 at 1/1600. The stills were blurry, but all of the action was there. Any ideas?
