->> When using Mac Mail I would like to include my web url in the signature....Highlighted so the recipient only needs to click it if they wish. Is that possible and, if so, how do I do it?

->> When I did this for my signature, I just opened my webpage on safari and copy and pasted the URL.. this way it had all the http stuff etc and it worked perfect

Whether or not it's clickable depends upon the reader's E-mail app. The way to increase your odds is to include the entire URL starting with "http://."

->> You can make an image that says robertbeckphotography.com and have that link to http://www.robertbeckphotography.com.

Not positive about the steps to do this in mac mail, as I use Mozilla Thunderbird, but I am sure it is possible.
